Fresh pasta tips
We took a leaf out of Laura Santtini’s new cookbook, Pasta Secrets, for the low down on how to make the best fresh pasta.
Laura suggests using only the finest ingredients and a pinch of love. ‘Type 00’ flour or ‘farina tipo 00’ (doppio zero) is finely milled especially for making pasta, while fresh free-range eggs are vital to give the pasta a nice, bright hue. If the yolks are a little on the pale side, you can always add a dash of yellow food colouring to the dough, and for added elasticity and flavour simply add a splash of olive oil into the mix.
